The Gap That Causes Every Overcooked Meal
Every conventional cooking method works by applying heat that is dramatically hotter than the internal temperature you are actually trying to reach. A cast iron pan runs at 200°C to bring a steak to 55°C. An oven sits at 180°C to cook a chicken breast to 74°C. That enormous gap is the reason overcooking happens: the moment your attention drifts, or the burner runs a little hot, food climbs past where you wanted it and keeps climbing.
Sous vide removes that gap entirely. The water bath is set to the exact internal temperature you want the food to reach — nothing more. A steak in a 55°C bath cannot exceed 55°C, because heat only flows from hotter to cooler. Once the food matches the water temperature, the system reaches equilibrium and heat transfer stops. The physics of it make overcooking essentially impossible.
What This Means When You Are Actually Cooking
The practical consequences are larger than they sound at first.
- Timing becomes forgiving. A chicken breast that has been in a 63°C bath for 90 minutes is still perfectly cooked at 120 minutes. The texture softens very slightly with longer cooks, but it will not dry out the way it would under direct heat.
- You can walk away. There is no need to watch the pan or probe the meat repeatedly. The bath temperature tells you exactly what the food will be before you start.
- Every piece cooks to the same doneness. A thick steak and a thin one in the same bath will both reach the same internal temperature. The thick one takes longer to get there, but neither will be over or under when they do.
The One Place You Can Still Go Wrong
Sous vide cooks food through completely but leaves the exterior grey and wet. A quick finish — a very hot cast iron pan, a broiler, or a kitchen torch — is necessary for both flavour and appearance. The Maillard reaction that creates a browned crust only happens at high surface heat, and sous vide never provides that. The risk at this stage is lingering too long and cooking the outer layer past your target temperature. Keep the sear short: thirty to forty-five seconds per side on the highest heat you can manage.
A Note on the Low Temperatures
Cooking protein at 55°C or 63°C sounds alarmingly low compared to conventional guidance, and it is worth understanding why it is safe. Food safety is not purely about temperature — it is about time at temperature. Pathogens are destroyed by sustained heat exposure, not only by sudden high heat.
