The Physics Behind the Foolproof Claim
In a conventional oven set to 200°C, your steak is surrounded by air that's 200°C. The moment you lose track of time, that heat keeps driving into the centre of the meat — long past well-done, into dry and rubbery. The oven doesn't know when to stop, and neither does the steak.
Sous vide works on a completely different principle. You set the water to the exact internal temperature you want the finished food to reach — say, 54°C for a medium-rare steak. When the steak's core hits 54°C, it's done. And because the water is also 54°C, there's no temperature gradient left to drive heat further in. The cooking simply stops. Leave the steak in for an extra hour, or even two, and it stays at 54°C. The physics won't allow it to go further.
This is the actual reason sous vide is described as foolproof — not a marketing claim, but thermodynamics. Heat transfers between two objects only while a temperature difference exists. At equilibrium: zero transfer.
What This Means in Practice
There is a window — which varies by protein — where holding time affects texture rather than just temperature. A steak held at 54°C for four hours starts to soften in ways that aren't universally liked; muscle fibres break down gradually even at low temperatures. But this window is measured in hours, not minutes. You have far more margin than with any other cooking method.
For most everyday proteins — chicken breast, salmon, pork tenderloin — the practical holding range is wide enough that you can leave food in the bath while you deal with other things, answer the door, or put the children to bed, and come back to food that's still exactly where you left it.
Where Overcooking Actually Can Happen
The one point where things can go wrong is the sear at the end. Sous vide cooks the inside; it does nothing for the outside. A quick sear in a screaming-hot pan is the usual final step, and that part is fast and unforgiving. Thirty seconds per side in a cast-iron pan with a thin layer of fat is ideal. Longer than that and heat starts migrating inward, chipping away at the precision you just spent an hour building.
Keep the sear short — under 90 seconds total contact time — and the surface temperature drops quickly enough that the interior stays right where you intended it.

The Upshot
Sous vide doesn't require attentiveness during cooking because there's nothing to attend to. Set the temperature correctly, seal the food well enough to keep it submerged, and the water holds the rest. The only decisions that matter happen before the bag goes in — what temperature, how long — and both are well-documented for virtually every protein you'd cook.
That's a different relationship with heat than most cooking, and it changes what the kitchen actually demands of you.
